The Foudre Project is a series of limited release beers expertly aged in oak Foudres at The Goose Island Barrel House in Chicago. The first release, this Wild Red Ale, aged in Foudres for 6 months and then spent 12 months aging in bourbon barrels. This combination of cooperages results in a dark tart cherry
note, caramel and faint vanilla backbone, with balanced tartness and lemon and citric acidity on the nose. This beer finishes with a clean tannic dryness.
